Mystery cupcakes

Mel with a tray of peanut butter buttermilk cupcakes with banana filling and chocolate peanut butter frosting

I’m heading up to my parents’ house just north of Syracuse for the rest of the week, but here’s a teaser for a recipe I’m currently working on. This recipe was requested by the head brewer at Iron Hill Brewery in Maple Shade, so I’ve gotta pull out all the stops.

I brought these cupcakes in to work on Monday for my taste testers to sample and give feedback. Everyone liked the cake, but said the filling needed work. And about half of them were on the fence about the frosting … they said the flavor was good, but the texture was a little off (and I know why).

Experimenting is so much fun!

Check back on Friday as taste tester extraordinaire Alexis joins me as a Guest Baker!

Awesome photo by Ray.
