Brownie Cookie Friday: Brookie lovechilds
12 Aug
Brookie Lovechilds
Yield: 24
Brownie Ingredients
6 oz bittersweet chocolate
2 oz semisweet chocolate
2 cup (4 sticks) butter, at room temperature
1 3/4 cups light brown sugar, packed
8 eggs
1 tbsp vanilla
2 cups flour
1 tsp salt
Eggless Chocolate Chip Cookie dough Ingredients
1 1/2 cup (3 sticks) butter
1 1/2 cup light brown sugar, packed
1 1/2 cup granulated sugar
6 tbsp milk
1 tbsp vanilla
3 cups flour
t tsp salt
2 cups mini chocolate chips
Directions
Preheat oven to 325 degrees Fahrenheit. Spray the bottoms and sides of a 9×13-inch pan with nonstick spray. Melt the semi-sweet chocolate in the microwave in a microwave-safe bowl covered with parchment paper (Check out this great video on melting chocolate at Food52!). Set aside chocolate to cool slightly. In the bowl of an electric mixer fitted with a paddle attachment, mix butter and brown sugar until creamy. Beat in eggs and vanilla extract, then mix in melted chocolate. Add flour and mix just until combined. Spread brownie batter into prepared pan. Bake 25 to 35 minutes, testing with a toothpick. Let cool completely on a wire rack.
To prepare the eggless cookie dough (do this while the brownies bake), combine butter, brown sugar and granulated sugar in a bowl of an electric mixer fitted with a paddle attachment. Add milk and vanilla, then mix in flour just until combined. Stir in chocolate chips.
Evenly spread cookie dough over the cooled brownies. Refrigerate the brookie lovechilds until firm (or place in the freezer to speed up the process). Use a sharp knife to cut the brookies and serve. And don’t get a blister on your index finger from cutting them like I did.

Yes, these treats are simply brownies topped with eggless cookie dough and chilled (this helps the dough adhere), but I wanted to be clever, hence “brookie”—brownie/cookie. Throw in the lovechild, and you have yourself a sinful low-brow treat.
I liked these. Thoughts:
PLUS: Definitely a decadent treat, like you’re eating some kind of illegal food combination that’s banned for being too good. A very good concept for a treat is what I’m getting at.
PLUS: The cookie dough. A little weird and slimy maybe, but that might just be because it was the eggless stuff/I’m used to eating fresh cookie dough or some that’s mixed in ice cream. Tasted very good though, and the texture was fine once I got past my initial texture expectations.
PLUS: Chocolate chips. I love them.
MINUS?: The overall sweetness/portion size. About halfway through the brownie, I started to feel a little bit of that “oof this is too sweet/rich illness,” though it was very slight and I muscled through anyway on account of personal pride. As you know, I’m kind of a big eater, though I’ll admit I do have a weak stomach at times. Take this comic with a grain of salt as always.
MINUS?: The Brownie? It was good, but not awesome? Could the brownie be taken in a different direction, like made harder and fudgier or heavier and moister?
OVERALL: A tasty treat. Would eat again happily. The minuses are debatable, the concept is distinctive and interesting, and overall it tastes pretty good.
Well, there’s a first for everything and I would have to say I am not crazy about this batch. I agree with Mike re. the cookie dough, I felt it was a bit slimy. That sounds worse than it actually was, I found it to be tasty, but I didn’t love it combined with the brownie. I also agree re. the brownie, it wasn’t what I expected. Pretty tasty, but not as moist as I would like.
I think it was a great idea for sure, but it just wasn’t one of my favorites.
Can’t wait until the next installment!
I liked today’s treat, but I didn’t love it. Again, I’m not a cookie dough lover (I know, I’m the only one of those who exists), so I don’t know if my assessment of that part is wrong. I do see what Mike and Mr. Jones are saying when they describe the texture as “slimy.” I was more overwhelmed by the sweetness of the cookie dough. I don’t think I had any issues with the brownie part in regard to taste or texture. It’s actually hard to comment on that because I think the brownie itself definitely is overshadowed by the large topping of cookie dough. I think it was a good idea and although it sounds like I’m being picky, I did eat the entire thing and would do it again!
V and I ate these while chilled (after reading your suggestion) and halved (after reading Mike’s gluttony). I didn’t get any sliminess on the cookie dough, which was as tasty as in past projects. For me, the issue was with the brownie: I couldn’t taste it. I thought the cookie dough may overpower the flavor, but even when I cut off a part and ate it separately I didn’t get any of the rich chocolate I was looking for. The texture on it was also more cake-like and dry than I like, but that’s a personal preference. The concept is good, but I think the execution on the brownie half could use some work.
I love the idea of this. Cookie dough awesome, brownies awesome. Making a hybrid of the two seems like a perfect combo.
I enjoyed the cookie dough. I ate mine room temp ignoring the warning. Yum! Perhaps some of the “slimy” texture would have been from congealed butter. Like when you eat a glazed doughnut that had been refrigerated. Anywho… Brownie did not have enough flavor to stand up to the cookie dough. More cake like.
I think this could be outstanding with some tweaks to the brownie base.
Thanks everybody!
The brownie: I completely agree, the recipe I used was a dud. This dessert needs a thick, chewy, rich chocolate brownie to hold up to the salty, buttery sweetness of the cookie dough.
The size: I wanted everyone to get their donation’s worth, but really, instead of mega brownie, I should have divided the portions in two so you wouldn’t go into immediate sugar shock.
I like the concept of a decadent brownie, but I’m not sold on this one. What does that mean? More experimenting!!!
Hey there, fellow Sea Monkey here…my husband Ray ( on Twitter) pointed out this post to me, since I love to bake, too, and the concept of brownies topped with cookie dough intrigued both of us. However, the comments gave me pause, so I went looking around and ended up making these brownies: http://allrecipes.com/recipe/fudge-brownies-i/detail.aspx, and this cookie dough (doubled the recipe do there’d be enough to go over the whole pan full of brownies): http://allrecipes.com/customrecipe/62870233/cookie-dough-for-ice-cream-eggless/detail.aspx. I just tried one and I like it a lot — the brownie holds its own against the cookie dough, and the cookie dough, having a lot less butter, was not at all slimy.
So, if you ever try this again, those are the recipes I’d recommend.
Thanks Tina! I’ll definitely check these out. My husband (also named Ray ) wants me to give them a second try.
I had made this brownie before so I knew it was good, and the cookie dough recipe (which is a modified version that many people said was better than the original in the reviews) was very good and did not overwhelm the brownie. I doubled the cookie dough for this experiment…well, really quadrupled since I also doubled the brownies (I bake for not only my coworkers but my husband’s, so everything gets doubled). There was some leftover cookie dough, but not a whole lot. (We’ll eat the leftover with ice cream.)
Of course I realize you’re coming up with your own recipes and may not want to use someone else’s (I have no aspirations to bake commercially, so it doesn’t matter to me), but I thought I’d share in case any other amateur bakers want to give it a shot.
Ack, feel free to moderate out my comment from just now. I checked to make sure the one from yesterday had not posted, and it hadn’t, so of course there it is now that I did it again. :-/
No worries…it got tucked into the spam filter (probably because of the links), but I try to check that every day or so for real comments. I approved your second as well (after editing out the repeat commentary) because I liked what you had to say
